Gain a Grand Heaping of Good Health with Scallops with Ginger

There's no denying, but even the medical community will tell you that certain foods added to your diet are healthy for overall wellbeing.



Fossils of scallops can be traced back 300 million years. Scallops, in addition to their delectable taste, contain a variety of nutrients that can further promote better health. Scallops are easily obtained worldwide. They are rich in protein, high in Vitamin B12 and include a great source of Omega-3 fatty acids. Scallops have an excellent source of critical minerals too, such as copper, iron, manganese, phosphorus, selenium, and zinc.

Ginger goes way back in time too. The nations of ancient India and China used the root of ginger as a tonic to treat common ailments. Although ginger originated in Southeast Asia, it was widely cultivated when it was introduced to the Mediterranean regions by 1st century by traders.

There are lots of different vitamins and minerals in ginger, including Vitamin B3, B6, C, iron, potassium, magnesium, phosphorus, zinc and niacin, amongst even more. Obtaining ginger root and cutting and grating it becomes more than a seasoning – it becomes a healthy choice.

Here's a simple meal for scallop lovers. Naturally placing scallops and ginger together becomes a double winner. It is so fast, easy to prepare and tasty too.


Serves: 4

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:


  • 1 tablespoon virgin olive oil

  • 1-inch fresh root ginger, grated

  • 4 scallions, finely chopped

  • 8-10 large sea scallops

  • 1 teaspoon soy sauce

  • Zest from a lemon

  • Water as called for

  • Pinch of sugar

  • Fresh parsley for garnishing

Instructions:


1. Heat the oil in a wok or non-stick pan until extremely hot. Add ginger and scallions. Stir fry for 1-2 minutes.

2. Add 3 tablespoon water.

3. Cover the pan and cook for 2-3 minutes.

4. Add the scallops.

5. Cook for 2 minutes, turning scallops once.

6. Stir while adding soy sauce, a pinch of sugar and zest from a lemon.

7. Stir-fry for 1 minute to heat through and serve with fresh parsley as garnish.
